    Japanese Mazesoba Ramen Noodles

    Mazesoba means “Mixed noodles” in Japanese. It is originated in Nagoya, Japan and it is a popular broth-less ramen dish, comes with ground pork, chives, green onions, corn and onsen egg. Stir everything together before eating.

    What is Mazesoba?

    Mazesoba (まぜそば) often call the Taiwanese Mazesoba or sometimes Mazemen (commonly found in the US), translates to ‘mixed noodles’ in Japanese. It is a broth-less or soup-less ramen originated in Nagoya city.

    Soba is a thin Japanese noodles that is made from buckwheat.

    This ramen is consisted of chewy buckwheat noodles, ground pork mixture and a variety of toppings such as green onions, chives, minced garlic, furikake, corn, nori seaweed and egg yolk. If you enjoy dry noodles, this recipe is right for you!

    What Ingredients you'll need?

    These Mazesoba recipe are so easy to make at home and tasty! Here is what you'll need for the recipe:

    For the ground pork:

    • Ground pork: you can substitute to minced beef or chicken for halal option
    • Light soy sauce
    • Dark soy sauce
    • Sugar
    • 5-spice powder
    • Brown onion: diced
    • Garlic: minced
    • Black pepper
    • Slurry: 3 tablespoon of cold water + 1 tablespoon of cornstarch

    For assembling

    Tare sauce

    • Chicken broth: warmed
    • Light soy sauce
    • Rice vinegar

    Toppings

    • Green onions: sliced
    • Chives: chopped 
    • Furikake: a dry Japanese condiment that used as an ingredient in onigiri
    • Garlic: minced
    • Corn
    • Shichimi togarashi: Japanese 7 Spice Blend
    • Egg yolk
    • Nori seaweed

    How to make it?

    Cook the ground pork:

    Heat up the oil over medium-high heat and add in the onion and garlic.

    Sauté the onion and garlic for 1-2 minutes or until fragrant and then, add in the ground pork.

    Cook the ground pork until it is perfectly browned.

    Then, add in light soy sauce, dark soy sauce, sugar, five spice powder and pepper. Give it a stir.

    In a small bowl, combine the corn starch and water.

    Pour the corn starch slurry and bring the pork mixture to a boil.

    Give it a final mix and set aside.

    Assemble:

    To a bowl, add in the tare sauce.

    Add 1 serving of Japanese soba noodles.

    Garnish with green onions, chives, furikake, garlic, corn, ground pork and nori seaweed. 

    Sprinkle the ground pork with Shichimi Togarashi.

    Top the ground pork with 1 egg yolk.

    Poke the egg yolk, give the noodles a good mix and enjoy

    Ingredients

    • 2 servings Japanese Ramen Noodles

    Ground Pork

    • 300 g ground pork
    • 2 tablespoon light soy sauce
    • 2 tablespoon dark soy sauce
    • 1 tablespoon sugar
    • ½ teaspoon 5-spice powder
    • ½ onion diced
    • 4 cloves garlic minced
    • â…› tsp pepper

    Slurry

    • 1 tablespoon corn starch
    • 3 tablespoon cold water

    Tare sauce (for 2 servings)

    • ¼ cup chicken broth warmed
    • 2 tablespoon light soy sauce
    • 2 tsp rice vinegar

    Toppings (for 2 servings)

    • 5 stalks green onions sliced
    • 10 g chives chopped
    • 2 tablespoon furikake
    • 6 cloves garlic minced
    • 2 tablespoon corn
    • ½ teaspoon Shichimi Togarashi ( Japanese 7 spice blend) can be found at Asian or Japanese grocers
    • 2 egg yolk
    • 6 nori seaweed small sheets

    Instructions

    • Heat up 1 tablespoon of olive oil over medium heat.
    • Add in the onion and garlic. Sauté for 1-2 minutes or until fragrant.
    • Add the ground pork and cook until it is completely browned.
    • Add in light soy sauce, dark soy sauce, sugar, five spice powder and pepper. 
    • Add the cornstarch slurry and bring the mixture to a boil. 
    • Remove from the heat and set aside.
    • Cook the Japanese ramen noodles according to the package directions and set aside.

    Assemble

    • In a bowl, add in the tare sauce.
    • Add 1 serving of Japanese ramen noodles.
    • Garnish with green onions, chives, furikake, garlic, corn, ground pork and nori seaweed. 
    • Sprinkle the ground pork with Shichimi Togarashi.
    • Top the ground pork with 1 egg yolk.
    • Give the noodles a good mix and enjoy!
